Baked Foil-Wrapped Cabbage Wedge

Even if you think you don’t like cabbage, you must try this recipe! Baking it completely covered makes it so juicy and tender while the Italian seasonings make it the most tasty dinner. Plus, the spread can be made well in advance which makes for a no-prep meal! Yum.

Cabbage Wedge Baked in Foil with Italian seasoning and a side of rice

Prep Time: 10 minutes
Cook Time: 45 minutes
Serves: 8
Ingredients:
  • 4 tbl butter or margarine
  • 4 tbl olive oil
  • 2 cloves of garlic, minced
  • 1 tbl mixed Italian herbs, dried- basil, rosemary, oregano, marjoram, thyme, etc.
  • 4 tbl Parmesan, finely grated
  • salt and pepper
  • 1 head of cabbage, cut into 8 wedges


Method:

  1. Preheat the oven to 175ºC/350ºF.
  2. Now, to prepare the Italian spread, mix the butter and oil together in a small bowl to make a soft consistency. Add the herbs, garlic, and Parmesan and mix. Finally, season with salt and pepper.
  3. Place each wedge on a piece of tin foil that is large enough to completely wrap it. Apply a generous amount of spread, entirely covering each wedge. (If the spread is too soft, just chill it in the fridge for a few minutes.) Finally, wrap the tin foil around each wedge to seal the parcel so it can steam.
  4. Place the individual wedges on a baking tray and bake for 45 minutes until the cabbage is tender. Serve piping hot with a side of rice.

Variation:
Try grilling the cabbage parcels rather than baking them!
